This is a delicious Mexican chicken tortilla soup made with pinto beans and a variety of beans. Make sure you have the list of ingredients below,
(please note, the brands mentioned are only a general guideline, you can use any brand you choose)
Ingredients:
1. 48 ounces of water.
2. A tin of Goya mexican white hominy.
3. A tin of Eden Organic black beans. (fifteen ounces).
4. A packet of Hidden Valley original ranch mix.
5. A tin of Eden organic pinto beans.
6. Four pieces of chicken breasts skinned and boneless.
7. A packet of Mccormick's taco seasoning mix.
8. A tin of dark red kidney beans.
9. One medium sized onion, diced.
10. Two tins of chopped tomatoes and green chili peppers.
11. A tin of Conagra ranch style beans.
Preparation:
1. Take a big pot and fill it with water. Put the chicken breasts in the pot and heat over a high flame. Once the chicken breasts are cooked (takes about an hour), you can take ot out of the pot and keep it aside.
2. Dice the chicken into small chunks add it back into the pot. Now add in the red kidney beans, pinto beans, Goya mexican hominy, tomato with green chili pepper mix, black beans, ranch dressing, Conagra ranch style beans, taco seasoning, and the chopped onion. Mix all the ingredients together and then lower the flame. Let the mixture continue to cook under a reduced flame for about half an hour.
